Peach Bellini: What's not to love?

I don’t know about you but I’m clueless when it comes to cocktails! I love to look at them. I’m totally fascinated by how they come together. But I have no sense of adventure when faced with picking one from the menu.

SO, naturally I stick with my very favorite: a Peach Bellini.

I love everything about this drink: the origin (authentic Italian), the bubbles (from Champagne or Prosecco), the fruit, the smell and the color. Simple but gorgeous!

Here’s my own Valentine’s version of the Peach Bellini, the easiest recipe you can probably find!

Made of 2 simple ingredients, this drink can be easily customized to any season, occasion and budget.


- A mini food processor

- A silicone heart mold

- 1 cup of frozen peaches

- 1 bottle of Prosecco or Champagne (for a no-alcohol version you can

use sparkling water)

- Your favorite glasses or flutes

STEP 1 - The night before: Since it’s not fresh peach season, I used two cups of organic frozen peaches (the ones you typically would put in your morning smoothie), and boiled them for a few minutes in hot water. I allowed some cooling time, placed them into a blender and pureed them. Once cooled, I poured the puree in a silicone heart mold from Michaels and placed them in the freezer overnight. (Also, don't forget to put your bottle of Prosecco or Champagne in the fridge!)

STEP 2 - The day of: When ready to serve your cocktails, just pop the frozen peach puree hearts out of the molds and set them aside briefly (we want to see those yummy hearts!!). Grab your favorite flutes or glasses, uncork your bottle of Prosecco or Champagne, pour in the alcohol, drop one or two hearts in the glass and CHEERS!! The hearts will float beautifully!
